Prep Time: 5 minutes - Cook Time: 20 minutes - Total Time: 25 minutes
1 Cup of rendered pork fat
20 Minced Garlic Cloves
1 Large Yellow Onion (Diced)
2 Cups of Sour Orange juice
1 tsp. Ground Cumin (Optional)
Salt and freshly ground black pepper, to taste
Heat the pork fat in a deep saucepan over medium heat. Add the garlic and onions to cook until lightly browned. Don't let it get dark or it will be acrid tasting, just about 30 seconds should do it.
Add the sour orange juice, cumin, salt and pepper. STAND BACK; the sauce may sputter. Bring to a rolling boil. Taste and correct seasoning, if needed
Cool before serving. Mojo is best when served within a couple of hours of making, but it will keep for several days, well capped in a jar or bottle, in the refrigerator
* Ideally you can find and use the natural sour orange (naranja agria) in the fruit form and freshly squeeze it, if not the bottled one can give you a similar result.
